Egg Brekky Tortilla

Servings 4

Ingredients

1 tbs. olive oil
4 corn tortillas or enchilada tortillas
4 eggs
8 tbs. refried beans
4 tbs. Mexican salsa – jar is fine
1 tbs. chopped coriander leaves
60 g grated cheddar cheese
1 avocado, sliced
4 cherry tomatoes, halved
4 tablespoons sour cream – optional
1 lime

Method

Lightly toast the tortilla on one side.

Fry your eggs until they are just cooked but the yolks are still soft. Spread 2 tablespoons of beans mixed with sour cream and half of the lime over each tortilla. Top with the salsa then place an egg on top of the salsa and season with sea salt and pepper. Sprinkle with the cheese. Grill or bake in the oven just until the cheese has just started to melt. Top each serving with coriander, tomatoes, avocado, a squeeze of lime and drizzle of olive oil.
