Dulce Flan

Ingredients

200g caster sugar

500g dulce de leche

120g egg yolk (approx 6-7)

60g egg white (approx 2)

500ml whole milk 

200ml water

Method

Preheat the oven to 130°C.

Firstly, prepare the caramel base for the moulds.

Place sugar and water together in a pan until the mixture starts to boil. Continue simmering until the caramel becomes golden brown. Remove from the heat and pour evenly into each mould.

Wait until the caramel cools down.

Place the milk and dulce de leche into a thick bottom pan. Heat the mixture, whisking with a spoon to avoid the dulce de leche going to the bottom of the pan and burning.

In a separate metal mixing bowl combine the egg yolks and egg whites. Pour the hot milk mixture over the eggs, whisking evenly together with a hand whisk.

Pass the preparation through a fine sieve.

Place the mixture in a measuring jug and evenly feel the moulds.

Cook the flans in a bain Marie, and cover with aluminum foil. Temp 130°C for about 30 minutes.

Remove from the oven/bain marie and allow to cool. Then refrigerate until ready to serve.
