Duck Laksa Skewers

Ingredients
4 duck breasts
1 tbsp Laksa paste
2 tbsp toasted peanuts, chopped
1 small handful of Thai basil
1 long red chilli, finely sliced
1 lime, cut in half
pinch of salt
Method
Place the duck skin side down into a large pan and slowly bring the heat up to allow the fat to render. Cook duck for 3-4 minutes or until skin is crisp. Remove from the pan cut into 2cm pieces. Thread the meat onto skewers and brush generously with the laksa paste. Heat the same pan with the rendered fat and cook skewers for 6-8 minutes turning regularly. Remove and rest for a few minutes.
Add the lime, flesh side down to pan and cook for a minute to caramelise.
Serve skewers with peanuts, basil, chilli, season with salt and a squeeze of lime.
