Doubly Decadent Gluten Free Double Chocolate Chunk Cookie

Servings 4 large cookies

Ingredients

150g Unsalted Butter
155g Brown Sugar
1 tsp Vanilla
1 large Egg
230g Gluten Free Flour
45g Cocoa Powder
1 tsp GF Baking Powder
1 tsp Sea Salt
350g Dark Chocolate

Method

Preheat oven to 170c

Cream your butter, sugar and vanilla on low speed for 1 minute, then turn the speed up to high and cream until light in colour, about 3-4 minutes.

Add your eggs and mix until incorporated.

Stir in your dry ingredients (flour, salt, cocoa powder and baking powder) until just mixed (be careful not to overmix at this stage, otherwise you will get flat, sad cookies)

Add your chocolate chunks

Let your dough rest anywhere up to 48 hours for best results, if you can’t wait….go ahead and bake some, they will still be amazing!

Bake for about 12 minutes in a hot oven at 170c.
