Dobbers’ Signature Ugly Delicious Donuts

Ingredients
540g self-raising flour
65g sugar
pinch salt
½ tsp cinnamon
½ tsp allspice
½ tsp nutmeg
1 lemon, zest and juice
30ml spiced rum or brandy
1 egg
570ml soda water
Vegetable oil for frying
Cinnamon sugar, for coating
Method
Pre-heat deep frying oil to 180°C.
Combine everything with 500ml of soda water. Using a whisk, hard and fast in large bowl, mixture may need more water depending on the size of the egg and the juiciness of the lemon. You want the mixture to be sloppy but not runny.
Using a donut maker or 2 tablespoons dipped in water, spoon mix into fryer, careful not to over fill.
Continuously move around the oil to ensure even cooking. Once the doughnuts become a rich golden brown colour, remove from the oil. Roll through cinnamon sugar while still hot.
