Delia’s Golden Syrup Steamed Puddings

3 tbsp golden syrup + extra 2 tbsp
175g self-raising flour, sifted
1 tsp baking powder
175g of brown sugar
Pinch of cinnamon
175g butter, softened + extra for greasing
3 eggs
1 tsp ginger, finely minced
6 tbsp vanilla bean ice cream

Delia’s Golden Syrup Steamed Puddings


Place a steamer basket over a saucepan of boiling water. Grease 6 x 150ml dariole moulds with some butter and drizzle in ½ a tbsp of the golden syrup in each.

Using a mixer, place the flour, baking powder, brown sugar and cinnamon into the bowl and combine. Now add the butter, the extra 2 tbsp of golden syrup, eggs and ginger and mix on a medium speed for 2 minutes. Divide the mixture into the prepared dariole mould and cover each with foil. Place in the steamer basket and steam for 40 minutes.

Remove from the steamer and cool slightly before turning out onto plates. Serve with ice cream and a little more syrup if you like.
