Dark Chocolate Soufflés

75g dark chocolate, melted and cooled slightly
1/3 cup caster sugar
2 tsp flour
2 tsp Marsala
½ tsp vanilla essence
2 eggs, separated

Dark Chocolate Soufflés


Combine the chocolate with the sugar, flour, Marsala and vanilla. Whisk through the yolks.

Beat the egg whites until stiff and fold gently through the chocolate mixture. Spoon into greased 1 cup soufflé dishes.

Bake in a moderately hot oven 190°C for 13-15 minutes or until well risen. Serve immediately.
