Cupcakes with Buttercream Frosting

Ingredients

1 ¾ cup of caster sugar
4 eggs
2 tsp vanilla bean paste
1 cup milk
200g butter, softened
400g SR flour, sifted
12 patty pans

125g butter, softened
1 ½ cups icing sugar
1 tbs. milk
Variety of food colourings

Method

Pre heat oven to 180C.

Place small patty cake cases into a 12-hole small cup cake tin.

Place butter, sugar and vanilla bean paste in mixer, and mix until light and fluffy. Begin to add eggs, one at a time until combined. Add flour and slowly mix. Add the milk and continue to mix.

Once combined, spoon into patty pans and bake for 20 minutes. Allow to cool.

For the icing, place butter and icing sugar into the mix, and whisk until light and fluffy. Slowly add the milk until you achieve a glossy frosting.

Use frosting as is or separate the mixture into 2-3 bowls (depending on how many different colours you would like to use) and then add a few drops of food colouring. Mix to combine.

Place in individual piping bags and pipe on to the pattycakes.

Decorate, and serve!
