Croque Monsieur

Ingredients
25g butter
25g flour
1¾ cups hot milk
½ tsp nutmeg
1 tsp Dijon mustard
8 slices of ham
4 large handfuls of grated gruyere cheese (or cheddar)
8 thick slices of sourdough or thick cut white bread
Method
Preheat the grill element in your oven.
For the béchamel, melt the butter in a saucepan. Add the flour and stir to make the roux. Gradually add the milk. Turn the heat up and whisk until the mixture becomes thick. Remove from the heat and add a pinch of salt and pepper, nutmeg, the gruyere and mustard, and whisk.
Place 8 slices of bread on two baking trays. Spread a tablespoon of béchamel evenly on each slice, then add a slice of ham and sprinkle cheese on top. Place in the preheated oven under the grill until golden brown.
