Crispy Smashed Brussels Sprouts

Ingredients

1 tsp of extra virgin olive oil

500g Brussels sprouts

1 tsp cumin seeds, crushed

Salt and pepper

Dipping Sauce

4 tbsp whole egg mayonnaise

1 tsp chipotle in adobo sauce, finely chopped

Juice ½ a lemon

½ tsp maple syrup

Method

Place the Brussels sprouts into the air fryer basket and launch ‘steam mode’. Steam for 5-6 minutes or until just tender. Remove and arrange in one single layer on a chopping board.

Using the base of the pan, smash the Brussels sprouts to flatten. Drizzle over oil and season with cumin, salt and pepper. In batches cook the Brussels sprouts on the air fry mode for 10 -12 minutes or until crispy.

For the dipping sauce combine all the ingredients.

Serve smashed Brussels sprouts with dipping sauce, extra lemon juice and olive oil.

NOTE: if your air fryer comes with a rack, air fry a double batch all at once.
