Crispy Fried Chicken Drumettes

Cook time 30 minutes + overnight marination
Servings 4 as an entree


12 chicken Drumettes
Rice Bran oil, for deep-frying
1 tbs. ketchup manis
1 tsp. soy sauce
1 ½ tsp. shaoxing wine
1 tsp. caster sugar
pinch of Chinese 5 spice
1 knob ginger, finely grated
2 clove garlic, finely grated
1 tsp. chilli sauce

Cornflour, for dusting
½ tsp. Chinese Five spice, for dusting
Sea salt
1 lime


Crispy Fried Chicken Drumettes


In a bowl make a marinade by combining, ketchup manis, soy, wine, sugar, Five spice, ginger, garlic and chilli sauce.

Place chicken pieces in marinade mixture and marinade for 6 hours or even better over night.

Add oil to a medium saucepan and heat over medium to high heat until hot.

With your hands, wipe off excess marinade from the chicken. Place in the combined Five spice and flour mixture. Dust off any excess. Carefully lower chicken pieces into the hot oil and shallow fry for 5-6 minutes or until golden. Place on some paper towelling to drain excess oil and serve immediately with extra salt and a good squeeze of lime.
