Crepes with Caramel Peaches

Ingredients
15g butter
1 cup of plain flour
2 tsp caster sugar
Pinch salt
2 eggs
460ml milk
70g caster sugar
40g butter, melted
2 peaches
Lemon zest
1 pinch cinnamon
Thick dollop cream to serve
Spoil yourself with a very special recipe; crepes with caramel peaches!
Method
Melt the 15g butter in a saucepan until it bubbles and froths. Take it off the heat once it starts to smell a little nutty. Place flour, sugar and salt in a large bowl and form a well in the middle. Add the eggs and begin to whisk gradually bringing in the flour. Slowly add the milk until well combined, then add the burnt butter to the batter. Allow the batter to rest in the fridge for 1 hour. Using a non stick crepe pan, spoon half a ladle-full of batter and spread evenly by agitating the pan to make it as thin as possible. Cook for 1 minute and then flip. Cook for a further 30 seconds. Remove from the pan and continue the process. In another pan add the 70g of sugar and bring to the boil until it starts to turn golden in colour. Now add the butter and swirl the pan until it melts and cook until a thick and rich sauce forms. Add peeled and quartered peaches and cook for 2 minutes. Place a few crepes on each plate, add the peaches, a spoonful of the sauce and serve with a dollop of cream.
