Crab Bruschetta

Cook Time 1 hour + an extra hour to chill crab

Servings 5-10

Ingredients

1 tbsp extra virgin olive oil

1 baguette or sourdough, thinly sliced on an angle

250g picked spanner crab

½ chilli, chopped

1 tbsp whole egg mayonnaise

¼ tsp freshly grated ginger

½ an avocado

¼ bunch of chives, finely chopped

¼ lemon, juice

Salt & pepper

Method

Heat a grill pan over high heat, brush the bread with oil and grill for a few minutes on each side.

For the avocado mayonnaise, blend the avocado, mayonnaise, ginger and chilli. Season with salt and pepper.

Dress the crab meat with a splash of olive oil and a small squeeze of lemon.

Spread avocado mayo on the toasted bread. And top with crab. Garnish with chives.
