Corn Fritters

Servings 4

Ingredients

200ml light extra virgin olive oil, for shallowing frying

3 corn cobs, kernels sliced off

1 French shallot

1 tsp freshly grated ginger

1 tsp sugar

1 egg

½ cup plain flour

½ tsp baking powder

Salt & pepper

Small handful each of mint and parsley

1 lime, to garnish

Yoghurt, to serve

Kasundi, to serve

Method

Place 3/4 of the corn kernels, shallot, ginger, sugar and egg and salt and pepper into a food processor or blender and blend until smooth. Place into a bowl and fold through the remaining corn kernels, flour and baking powder.

Heat oil in a frying pan and add spoonfuls of the mixture. Cook for 1-2 minutes and then turn and cook for a further 2 minutes. Drain on some paper towel.

Serve with a dollop of yoghurt, kasundi, lime and herbs.
