Coconut Milk Sorbet

Cook Time 30 Minutes + Chilling

Servings 4

Ingredients

3/4 cup of sugar
3/4 cup of coconut water
400ml of coconut milk
Juice of half a lime
¾ of an egg white

Method

Make a sugar syrup by boiling the coconut water and sugar for 5 minutes. Cool completely. Now add the coconut milk and lime and stir well.

Place in an ice cream maker and churn as per manufacturers instructions. Once the mixture starts to become thick, add the egg white and continue churning. This will make the sorbet very glossy. Freeze the ice cream until ready to serve.
