Chorizo Sofrito

Ingredients
2 red capsicum, deseeded and cut into chunks
2 green capsicum, deseeded and cut into chunks
2 tomatoes, peeled and deseeded
1 brown onion, quartered
2 cloves garlic
1 chorizo sausage, chopped
1 tbsp smoked paprika
3 tbsp extra virgin olive oil
Salt and pepper, to taste
Method
In a food processor, add the onion, garlic, capsicum, tomatoes, smoked paprika and chorizo and blend until finely chopped.
Add a generous amount of extra virgin olive oil to a hot paella pan or a large frying pan. Add the sofrito base, season and cook down, constantly stirring for about 15 minutes until thick and rich.
