Chocolate Self Saucing Pudding

½ cup milk
40g butter, melted
1 egg
1 tsp vanilla
1 cup flour
¼ cup caster sugar
2 tbsp cocoa
2 tsp baking powder
½ cup brown sugar
2 tbsp cocoa, extra
1 cup boiling water
Icing sugar, for dusting
Cream, for serving, optional

Chocolate Self Saucing Pudding


Combine the milk, butter, egg and vanilla. Sift together the flour, caster sugar, cocoa and baking powder. Pour in the milk mixture and stir to combine. Spoon into four greased 200mL ramekins. Sprinkle each with a little brown sugar and extra cocoa then pour ¼ cup boiling water over each.

Bake in a moderately hot oven 190°C for 20-30 minutes. Stand for five minutes before serving, dusted with icing sugar and a dollop of cream.
