Chocolate Roulade with Chocolate Mousse

Ingredients

½ cup flour
¼ tsp salt
½ tsp baking powder
60g cooking chocolate
8 eggs
¾ caster sugar
1 tsp vanilla essence
2 tbs cold water
½ tsp bicarb
Icing sugar for dusting

Method

  1. To make the Chocolate mousse place 125g of chocolate in a small heatproof bowl over hot water. Once melted, remove from heat and blend in 4 egg yolks. Beat 4 eggwhites until stiff peaks and gently fold into the chocolate mixture. Leave in fridge for 1 hour to set.

  2. sift together flour, salt and baking powder. Melt chocolate gently in a heatproof bowl over hot water. Cool slightly. Beat 4 eggs with caster sugar until very light and thick. Fold flour mixture and vanilla all at once into the egg mixture. Add water and bicarb to chocolate, stirring until smooth. Fold quickly Fold quickly and lightly into egg and flour mixture. Line a flat, shallow baking tray with baking paper and pour the mixture in. Bake for 15 minutes in 200-degree oven. Once cooked, take it out if the over and let it cool.

  3. Spread the mousse over the top and roll into a roulade

  4. Dust with icing sugar. Serve with fresh berries.
