Chocolate, Coconut and Peppermint Cheat’s Ice Cream

Prep Time 30 minutes + overnight freezing

Servings 1.5L of ice cream

Ingredients

400ml thickened cream

395g sweetened condensed milk

½ tsp peppermint extract

¼ tsp coconut essence

Food colouring, few drops

100g dark chocolate, chopped

½ cup shredded coconut

Waffle cones, to serve

Method

In a bowl whisk thickened cream till stiff peaks start to form.

In another bowl mix together the condensed milk, peppermint extract, coconut essence, green food colouring, dark chocolate and shredded coconut.

Fold the whipped cream and peppermint mixture together. Pour into a 1.5 litre tray, cover with cling film and freeze for 6 hours or overnight until firm.

Serve scoops in cones.
