Choc Chip & Orange Cakes

Ingredients
192g medium free-range eggs, beaten (approx. 4)
70g caster sugar
145ml fresh squeezed orange juice
4ml vanilla essence
20ml sunflower oil
1g orange zest, finely chopped
Small pinch of salt
½ tsp baking powder
65g coconut flour, sifted
65g self-raising flour
25g dark chocolate chips
Method
In an electric mixer combine eggs, caster sugar, orange juice, vanilla essence, sunflower oil, orange zest and a small pinch of salt. Mix at a low speed for 1–2 minutes until all ingredients are well combined. Sprinkle in the coconut flour & self-raising flour a little bit at a time whilst mixing until completely incorporated. Mix for a further 1–2 minutes at a low speed ensuring all ingredients are well combined.
Preheat the oven to 175°C. Evenly distribute the cake batter into a non-stick friand or small muffin mould tray, at approximately 50g per mould then sprinkle 6–7 choc chips over each muffin. Bake for approximately 20 minutes until light and fluffy in texture.
Remove muffins from the baking pan and place them on a wire cooling rack and cool before serving.
