Chicken Wrapped in Nori

Servings 4 as a canapé
Ingredients
Vegetable oil for shallow frying
2 pieces of chicken breast, skin off and cut into bite size pieces
1 tbsp cornflour combined with 2 tbs. water
¼ cup ketjap manis
1 tbsp ginger grated
2 nori sheets, 7cm x 2cm strips
Dipping sauce
2 tbsp lime juice
1-2 tbsp fish sauce
2 tbsp water
1 tbsp sugar
1 tbsp sambal oelek
¼ cucumber, finely chopped
3 tbsp whole egg mayonnaise

Method
Combine the cornflour slurry, kacap manis and ginger. Add the chicken and coat well. Wrap each piece of chicken in the nori roll strips.
Heat oil in a large frying pan. Shallow fry the chicken until golden brown and drain excess oil on some paper towelling.
For the dipping sauce mix all ingredients. In the centre of a bowl, dollop the mayonnaise in and pour over the dipping sauce. Serve with the chicken bites.
