Chicken Wrapped in Bacon

Ingredients
1 tbsp extra virgin olive oil
6 chat potatoes
2 chicken breasts
6 slices of streaky bacon
2 bunches of cherry tomatoes, still on the vine
1 bunch asparagus
3 sprig sage
50ml white wine
Salt and pepper
Method
Set your air fryer to steam function. Add the potatoes and steam until tender. Turn to air fryer function.
Place tomatoes, asparagus and wine into a round dish that fit into the air fryer. Drizzle over half the oil and season with salt and pepper.
Season the chicken breast with salt and pepper. Lay 3 slices of bacon, side by side and overlap a little. Add a few sage leaves. Place chicken breast onto bacon and wrap. Fasten with skewers. Arrange on a rack, seam side down. Repeat with the remaining bacon and chicken. Brush with remaining oil and place rack on top of tomatoes. Transfer to air fryer and cook on chicken mode for 20 minutes.
Serve chicken wrapped in prosciutto with asparagus, blistered tomatoes and pan juices.
