Chicken Hommus Lettuce Cups

Servings 6

Ingredients

½ bbq chicken, meat shredded and skin and bones discarded

1 stick celery, diced

1 French shallot, finely diced

2 sprigs each of dill and parsley, chopped plus extra for garnish

1 handful of toasted walnuts, chopped plus extra for garnish

75g fetta, crumbled

6 butter lettuce leaves, roughly the same size

Dressing

¼ cup of hommus

2 tbsp natural yoghurt

Juice of ½ lemon

Pinch oregano

Salt and pepper

Method

For dressing, whisk everything together and season accordingly with salt and pepper.

In a large bowl toss together the chicken, celery, shallots, herbs, nuts and fetta. Add dressing and toss everything together.

Arrange lettuce cups on a plate and fill with the chicken mixture. Garnish with extra herbs and nuts.
