Chicharron Guacamole

Servings 4 as an entree

Ingredients

2 avocados diced
2 tbsp chopped coriander leaves
1 large tomato, deseeded and diced
1 tbsp diced green chilli
¼ red onion, finely diced
1 tsp salt flakes
1 lime, juiced
1 cup of crumbled pork chicharron (pork scratching/crackling)

Method

To make guacamole, place the avocados, tomato, chilli, lime juice, salt and onion in a bowl and roughly mash. Just before serving stir in the, coriander leaves and chicharron.

Serve with the corn chips.
