Cheesy Fillo Palmiers

12 sheets of fillo pastry

2 ½ cups of cheddar, loosely packed

1 cup of almonds, finely chopped

1 bunch of chives, finely chopped

6 rashers of bacon, finely chopped

20g butter, melted

Pre heat the oven to 200C and line a tray with baking paper.

Heat a small pan over medium heat and fry the bacon bits until golden brown. Drain in paper towelling.

Combine the cheese, almonds, chives and bacon in a bowl.

Lay 1 sheet of the fillo with the long edge facing you and brush generously with butter. Top with 5 more fillo sheets so you have two bundles of six layers.

Top each fillo bundle with the cheese mixture leaving a 1cm border. Fold the sides of the rectangle towards the center so they go halfway to the middle. Fold again until both sides meet in the middle. Brush with extra butter then cut into 2 cm thick slice. Place flat on the baking tray and bake in the oven for 15-20 minutes or until golden brown.
