Chargrilled Butterflied King Prawns

Ingredients

12 large green king prawns, head removed (optional)
40g butter, softened
1 tsp. smoked paprika
½ red chilli, very finely chopped
1 clove garlic, grated
Zest of 1 lemon
Pinch salt

Method

To butterfly the prawns use a serrated knife and carefully cut the belly of the prawn ensuring not to cut through all the way to the back and leaving the tail intact. With a small knife remove the intestinal tract. Press down on the prawn slightly to keep it flat and open.

Mix the butter, paprika, chilli, garlic, lemon and salt in a small bowl until well combined. Using a pastry brush, brush the flesh of the prawn with a generous amount of butter.

Heat the grill element of the oven. Arrange the prawns on a tray, flesh side up and grill for 30 seconds or until the shell start to change colour.

Remove from the oven serve immediately.
