Calamari in Padella, Radicchio e Capperi

1kg fresh calamari
50g brown onion, finely chopped
100g continental parsley, finely chopped
1 chilli, seeded and finely chopped
20 sicilian capers
2 lemons, juiced
1 radicchio trevisano
200ml extra virgin olive oil
Salt and pepper

Calamari in Padella, Radicchio e Capperi


Score and clean the calamari and rinse them under fresh water. Heat the pan with oil and cook off onion, parsley and chilli for 2 minutes. Add the calamari and cook thoroughly for three more minutes. Once cooked add it to a bowl with the radicchio, capers, salt and pepper, lemon juice, olive oil and mix well.

Serve in a bowl with grilled fresh ciabatta, drizzled with olive oil.
