Buffalo Mozzarella on Lemon Leaves

1 tbsp extra virgin olive oil plus extra for brushing

250g (about 2 balls) buffalo mozzarella, cut into 8 rounds

8 good-quality anchovies

8 large lemon leaves

Zest of a small lemon


Buffalo Mozzarella on Lemon Leaves


Heat a grill pan or BBQ over medium-high heat.

Wash and dry lemon leaves then brush both sides with oil. Arrange each mozzarella portion onto the leaves.

Place on grill (may have to do this in batches), leaf side down and cook for 2-3 minutes or until leaves begin to char and mozzarella melts.

Arrange on a platter and garnish with anchovies, lemon zest, pepper and a drizzle of oil.

Serve with bread on the side.
