Buffalo Drumettes

Ingredients

2 tbsp extra virgin olive oil
8 drumettes
1 tsp smoked paprika
1/4 cup plain flour
Salt and pepper

15g butter
1 clove garlic
2 tbsp hot chilli sauce
2 tbsp sambal oelek
1 tbsp maple syrup
Salt

An American favourite, crunchy chicken with a sweet chilli sauce!

Method

Pre-heat the oven to 190C.

In a resealable bag add the paprika, flour and salt and pepper. Add the chicken in batches and give the bag a good shake to coat then dust off excess.

Put the oil in a large rimmed baking tray and place in the oven for 5 minutes to heat up. Carefully bring tray out of the oven and arrange the wings in a single layer. Bake in the oven for 20 – 30 minutes, turning once.

While the chicken is cooking slowly melt the butter. Now add the garlic, chilli sauce, maple syrup and salt, and stir to combine. Place in a large bowl and add the chicken. Coat the drumettes really well in the sauce before serving immediately.
