Brussels Sprouts Bubble and Squeak

20g butter
1 tbsp Extra Virgin Olive Oil
200g Black pudding, chopped (optional)
100g brussels sprouts, shredded
2 cups leftover mashed vegetables (potatoes, sweet potatoes, celeriac etc)
50g Cheddar cheese, grated
4 eggs

Brussels Sprouts Bubble and Squeak


In a hot pan, heat the butter and oil. When melted add the black pudding, the brussels sprouts and salt and pepper. Cook for about 5-6 minutes or until everything in the pan starts to caramelise.

Add the mashed vegetables to the pan and mix together. Then add a handful of the cheddar cheese and mix through. Press down on the mixture until it is evenly spread in the pan just like a pancake. Once it starts to cook and is fried on the bottom, flip the large pancake and fry on the other side.

Fry the eggs in a separate pan.

Serve each slice of bubble and squeak with a fried egg.
