Broccoli with Grated Hard Ricotta

Ingredients

2-3 heads of broccoli, quartered
½ bulb of garlic, left in skin
Salt and pepper
3 tbsp balsamic vinegar
1/3 cup extra virgin olive oil plus an extra 3 tbsp extra virgin olive oil for drizzling
150g piece of hard ricotta

Method

Preheat your oven to 180C. In a large baking tray drizzle broccoli pieces and the garlic with oil and season with salt and pepper. Bake in the oven for 15 – 20 minutes. Once cooled enough to handle, squeeze the flesh out of the garlic into a bowl. Add the vinegar and oil and with well to combine. Season with salt and pepper. Pour the dressing over the broccoli and toss in the baking tray before arrange on a large platter. Finally grate cheese over the broccoli.
