Brioche Eggy bread with honeyed banana and blueberries

Ingredients

1 brioche loaf
3 eggs, lightly beaten
1 tsp of vanilla essence
1 cup of milk
50g butter

3 tbs honey
2 ripe bananas
1 punnet of blueberries
2 tbs mascarpone
½ tsp cinnamon (mixed into mascarpone)

Method

Cut brioche into thick slices

Whisk eggs, milk and vanilla essence together.

Dip the brioche into the egg mixture, letting any extra drain off.

Heat a large frying pan adding halve of the butter to medium heat.

Add the eggy brioche to the pan and fry until golden brown.

Cook the rest of the slices of brioche in the butter.

To serve arrange the brioche on the plate the sliced banana, blueberries, honey and a dollop of mascarpone.
