Breaky Berry Pancakes

Ingredients
1 cup milk
1 egg
Olive oil, for brushing
¾ cup wholemeal plain flour
½ cup instant oats
¾ tsp baking powder
½ tsp bicarbonate of soda
3 tbsp caster sugar
250g berries of your choice
Maple syrup, to serve
Method
Crush half the berries in a bowl. Whisk in the egg and milk and combine.
In another bowl, combine the flour, oats, sugar, baking powder and bicarbonate of soda.
Heat a large pan over medium heat, brushed with olive oil. Dollop spoonfuls of the batter spaced evenly around the pan. When bubbles appear, flip the pancakes over and cook for a further minute or so.
Serve with a drizzle of maple syrup and top with fresh berries.
