Breakfast Couscous

Servings 4 - 6

Ingredients

1 cup (250ml) apple juice
2 tbsp honey
1 cup couscous
75g packet flaked/slivered almonds or nuts of your choice
½ cup dried fruit mix
½ cup seeds /pumpkin/ pepitas/chia seeds
¼ cup sultanas, raisins, goji berries – whatever you prefer
2 green apples
Good quality yoghurt, to serve

Method

Preheat oven to 180°C. Place apple juice and honey into a saucepan and bring to boil. Place couscous into bowl. Add juice mixture, stir to combine and cover with cling wrap. Set aside for 5 minutes or until liquid absorbs. Once the liquid has been absorbed into the couscous use a fork to separate the granules. Place almonds or whichever nuts in a dry pan and toast over a medium heat until golden brown. Stir in the sultanas, dried fruit, seeds and toasted almonds into the couscous. Coarsely hand-grate the apples. Add to couscous and stir to combine. Serve topped with a dollop of yoghurt.
