Bo Ne - Saigon Breakfast

Ingredients

4 banh mi rolls, from a Vietnamese bakery

4 x 100g sirloin or scotch steaks

4 free range or organic eggs

8 sprigs of coriander

1 Lebanese cucumber, quartered lengthways

2 chilies, sliced

Pâté (can be store bought)

Salt and pepper

Soy sauce

Lettuce leaves

1 tomato, halved and sliced

Butter Mayo

2 egg yolks

300ml vegetable oil

Method

To make the butter mayo, put the eggs in a food processor and mix the eggs while slowly adding the oil. Take care to not add the oil too quickly as this could make the eggs split. Mix the eggs until the butter mayo is thick and looks like soft butter, set aside.

Heat a hot plate or small pan over medium high heat. Season the steak with salt and pepper and a little soy sauce. Once the hot plate is hot add oil and add the steak to cook, around 1 minute on each side, add the eggs and cook sunny side up. When the egg is cooked add the pâté, remove from the heat and serve the hot plate on a wooden board.

Garnish with coriander and sliced chilli.

Serve the steak and eggs with a side of the lettuce and tomatoes, banh mi, butter mayo and soy sauce. People can build their own perfect little mouthful!

The hot plate the steak and eggs are cooked on will be what is served at the table. You can use a small fry pan if you don’t have hot plates.
