Blue Cheese, Fig and Walnut Sable Biscuits

¾ cup Lighthouse Biscuit, Pastry & Cake Plain Flour

60g crumbled blue cheese

1 tsp table salt

100g butter

40g toasted walnuts, finely chopped

40g figs, finely chopped

Cracked black pepper

Extra salt for sprinkling

Blue Cheese, Fig and Walnut Sable Biscuits


Preheat oven to 180°C and line 2 oven trays with baking paper.

Mix the flour, figs, walnuts, blue cheese salt and a good crack of pepper together in a bowl or food processor. Grate and mix the butter into the bowl until fully mixed in.

Roll out dough between 2 sheets of baking paper until 1cm thick. Using a 5cm round biscuit cutter, cut rounds from dough. Repeat until all dough is used up. 

Bake biscuits for 6 to 8 minutes or until light golden. Stand on trays for 5 minutes. Transfer to a wire rack to cool before serving.
