Beer Can Roast Chicken

Ingredients

1 whole chicken
2 bay leaves, torn
1 can of beer


Marinade
2cm piece of ginger, minced
3 cloves garlic, minced
2 tsp dried oregano
1 tbsp smoked paprika
1 tsp chilli powder
1 lemon, zest and juice
1 tbsp red wine vinegar
2 tbsp extra virgin olive oil
Salt and pepper

Method

Remove the chicken from the fridge 1 hour before cooking and dry the skin with paper towel.

Preheat oven to 190°C.

Place all of the marinade ingredients into a bowl and combine with salt and pepper to taste. Add ⅓ of the beer from the can and whisk together.

Place the bay leaves in the can of remaining beer. Push the beer can into the chicken’s cavity so it sits up straight, then place the chicken upright into a baking dish. Pour the marinade into the dish and brush it all over the chicken. Place the chicken in the centre of the oven and roast for 45 minutes-1 hour, basting every 20 minutes.

Rest for 20 minutes before carving.
