Beef tartare with crispy wontons & wasabi avocado

Ingredients

8 wonton wrappers, cut into 6.5cm circles
Vegetable oil, for shallow frying

Avocado puree
1 ripe avocado
1 tsp. lime juice
½ tsp. wasabi paste
Drizzle olive oil
Pinch salt

Beef tartare
300g piece of center cut beef fillet
Zest ½ lime
½ small shallot, finely chopped
4 baby cornichon, finely chopped
1 tsp. baby capers, finely chopped
½ red chilli, finely chopped
1 tsp. dried wakame, rehydrated and finely chopped
1 tbsp. soy sauce
2 drops sesame oil
½ tbs. olive oil
½ bunch chives, finely sliced
Black sesame seeds, optional

Method

For the wontons, heat the oil in a small fry pan. Gently place the wrappers in the oil and cook until golden brown. Drain on paper towel. (They should slightly curl to form a cup shape)

To prepare the avocado puree, blend all the ingredients together until smooth.

For the tartare, cut the beef into small cubes, then run your knife through this a few times to get it as fine as possible. Add the rest of the ingredients and adjust the seasoning at the end if necessary.

To serve, dollop a teaspoon of the avocado puree onto the crisp wontons followed by a quenelle of the beef. Garnish with chives and black sesame seeds.
