Beef and Mushroom Bolognese

Ingredients

1 tbsp olive oil

200g button mushrooms

500g beef mince

1 onion, diced

1 carrot, diced

1 stick celery, diced 

3 garlic cloves, finely chopped

1 sprig rosemary, finely chopped

700g tomato passata

Salt and pepper, to taste

Method

Preheat the oven to 190°C.

Heat the oil in a pan over medium heat. Add the onion, carrot, celery, and chopped rosemary. Cook for 8-10 minutes, or until the vegetables are very soft.

Add the beef to the pan and cook, stirring, until it browns. Then, add all of the mushrooms and stir them into the onion mixture. Season with salt and pepper to taste.

Pour in the passata and 1 cup of water. Cover with a lid and let it cook for 40 minutes, until the sauce is rich and fragrant.

Serve with your choice of pasta or potatoes.
