Baked Gooey Cheese with Sweet Chilli

2 large balls of mozzarella
200g smoked cheddar cheese, grated
1 tomato, seeds removed and finely diced
3 tbs. sweet chilli sauce
Pinch sumac
1/4 cup crispy shallots

Baked Gooey Cheese with Sweet Chilli


Pre-heat the oven to 220C.

Cut the mozzarella balls in half and arrange in a medium ovenproof earthenware dish.  Sprinkle over the smoked cheddar and bake in the oven until the cheese is gooey and golden brown.

Combine the tomato, sweet chilli and sumac together. Drizzle over the hot gooey cheese before sprinkling with crispy shallots.
