Baked Eggs with Avocado and Streaky Bacon

Ingredients

1 knob of butter

5 eggs

4 cherry tomatoes, cut in half

1 avocado, sliced

50g Danish feta

Pinch of oregano

6 slices of streaky bacon

Salt and pepper

Toast sourdough, to serve

Method

Preheat the oven to 220°C.

Place bacon on the tray and cook in the oven on the top shelf for 7-10 minute or until crisp.

Grease an oven-safe earthenware dish and crack in the eggs. Scatter over the tomatoes and feta, season with salt and pepper. Place in the oven and cook for 5 minutes for running eggs and a little longer if you like your eggs done a little more.

Remove bacon from the oven and arrange on top of eggs. Serve with avocado, a pinch of oregano and toast.
