Baked Blueberry Porridge

Servings 4-6

Ingredients

2 cups rolled oats

1 tsp baking powder 

1 tsp cinnamon 

250g (2 punnets) blueberries, plus extra for garnish

½ cup of shaved coconut, to garnish

Pinch of salt

Wet Ingredients

2 ripe bananas, mashed

2 tbsp peanut or any nut or seed butter or your choice

4 tbsp maple syrup or honey

3 eggs

1½ cup milk of your choice

2 tbsp macadamia oil, plus extra for greasing

Yoghurt, serve

Method

Preheat the oven to 180°C and grease a baking dish of your choice.

Combine the oats, cinnamon, a pinch of salt and baking powder into a bowl.

Mix together the wet ingredients. Fold the wet ingredients into the dry ingredients to make a batter then fold through the berries.

Pour into prepared dish and bake in the oven for 40-45 minutes until just set.

Cool for 15-20 minutes before serving with a dollop of yoghurt and garnish with extra berries. Also great, sliced and served cold.
