Bacon and Cheddar Biscuits

Ingredients

100g plain flour

½ tsp baking powder

1 tsp caraway seeds

Pinch of salt

80g butter, cold and cubed

1 egg yolk

60 g cheddar, grated

1 rasher of middle bacon, finely chopped

Method

Preheat the oven to 200°C.

Sift the flour and baking powder together onto a board and add a pinch of salt, 3/4 of the chedda and the caraway seeds. Using your hands, incorporate the butter by squashing between your fingertips.

Roll out so the dough is about 5mm thick. Use a 5cm cookie cutter to cut out rounds. Place on a tray lined with baking paper and sprinkle over bacon and remaining cheese. Bake for 10-15 minutes.
