Baby Capsicums Stuffed with Goats Cheese

Ingredients

½ tbsp extra virgin olive oil

250g of baby capsicum

200g goat’s cheese

Salt & pepper

Method

Preheat the oven to 180C.

Cut a small slit lengthways down each baby capsicum. Insert a chunk of cheese. Season with salt and pepper and drizzle with olive oil.

Roast in the oven for 15-20 minutes.
