Aussie Nut and Sultana Log

Cook Time 15 minutes (+ refrigeration time)

Ingredients

1 ½ cups dried figs, roughly chopped
1 ¼ cup of sultanas
1 ½ cups of nuts (a mix of almonds, macadamias, walnuts)
2 tbsp vino cotta (or port)

An assortment of cheese

Method

In a small pan, lightly toast the almonds, macadamias and walnuts.. Cool slightly. In a food processor, blitz the figs, nuts, sultanas and vino cotta until a rough paste is formed.

Spoon the paste into the centre on cling film and then tightly roll to form a log. Refrigerate until firm. Slice into circles and serve with an assortment of cheeses on a platter along with your favourite crackers.
