Apple and Custard Fillo Tart

Ingredients

100g butter, melted

16 sheets of filo pastry

1 Granny Smith apple, peeled, quartered

6 raisins, soaked in boiling water for 10 minutes then drained well

Icing sugar, for dusting

Custard

2 eggs and 1 egg yolk

200ml thickened cream

½ cup of caster sugar

¼ tsp cinnamon

Zest ½ lemon

Method

Arrange apple quarters into the air fryer basket and steam apples on the steamer function until tender. Cool completely.

To make the custard filling, whisk together the eggs and sugar. Add the cinnamon and zest and then gradually whisk in the cream.

Grease a 20 cm round pan that fits into the air fryer. Brush two sheets of filo together and sandwich together. Scrunch together lengthways to form a crinkled strip of fillo. Roll to form a rose shape and place in the centre of the pan. Repeat the process with the remaining fillo but instead of forming into a rose shape, wrap around the rose until the whole pan is filled.

Brush the top with extra butter, add small apples chunks and raisins in and around the layers of fillo. Slowly pour over the custard.

Air fry at 180°C for 10 - 15 minutes, until golden. Cool a little before dusting with icing sugar and serving.
