Acai Berry, Almond and Chia Muffins

Ingredients

1 cup self raising flour
1 tsp cinnamon
2 tbsp Bioglan Chia Seeds
1 cup almond meal
2/3 cup raw sugar
3 tbsp Bioglan Acai + Berry Powder
125g blueberries
1 cup buttermilk
¼ cup extra virgin olive oil
1 egg white

Daniela is back in the Everyday Gourmet kitchen to show us how to make muffins that are loaded with healthy super foods and they taste good too!

Method

Preheat 190°C. Sift flour, cinnamon into a bowl, stir in the chia, almond meal, raw sugar, berry powder and blueberries. Whisk buttermilk, olive oil and egg white.

Fold the liquid ingredients into dry ingredients and mix until just combined. Divide the mixture between six large muffin tins. Bake for 30-35 minutes at 190C until golden brown.
