Wholemeal Penne with Mushrooms, Speck and Basil

250g wholemeal penne

500g mixed mushrooms – enoki, swiss brown, king brown, shitake, oyster, pine (whatever you can find at your local fruit shop)

50g speck, diced

½ tsp chilli flakes

1 brown onion, finely diced

1 garlic clove, finely chopped

½ cup white wine

½ bunch basil leaves

Sea salt flakes


Extra virgin olive oil

Wholemeal Penne with Mushrooms, Speck and Basil


In a fry pan, add 2tbs extra v olive oil. Add the garlic and onion and cook off for a few minutes, then add the chilli flakes and the speck. Continue to cook until the onions start to gain a bit of a golden colour.

Add the mushrooms, and stir until the mushrooms have cooked through. Add a little white wine and reduce by half. Season with salt and pepper, toss through pasta and basil leaves.

Serve with grated parmigiano cheese.
