Vegetarian Cauliflower Dip

Servings 4-6

Ingredients

1 Cauliflower

150ml of extra virgin olive oil

1 clove of garlic, finely minced

1 onion, sliced

2 long red chillies, finely chopped

1/2  tsp cumin and

1/2  tsp paprika

1/4  tsp ground fennel

1 tsp ground coriander

1/2  a bunch of coriander, chopped

1/4  tsp ground cinnamon

2 tsp. of salt 

Cracked pepper

juice of 1/2 a lemon

Vegetarian Cauliflower Dip

Method

Chop the cauliflower, toss in 20 ml of olive oil and a pinch of salt and bake at 180C for 35 minutes until golden brown. Add a tbsp of the oil to a pan and slowly cook the garlic and onion together for 6 mins or until soft. Mix in the spices and cook for a further 2 mins.

Now blend (or process) this mixture lend along with the cooked cauliflower until  smooth. Slowly trickle in the remaining oil and add the lemon juice. Adjust the seasoning to your taste and serve with your Lavosh crackers or your favourite crackers.
