Ingredients

100g of white fish roe

3 slices of stale white bread, crust removed

½ small white salad onion, grated (or the white part of 5 large spring onions)

½ small garlic, minced

500ml grapeseed oil

1 lemon, zest and juice

1 tbsp extra virgin olive oil to garnish

Taramasalata

Method

Soak the bread in water until soft. Squeeze the excess water from the bread and place in a food processor along with the fish roe, lemon, onion and garlic. Blitz until smooth.

With the motor still running, very slowly drizzle in the oil. Continue this process until a light and fluffy dip is created. Taste to check seasoning, add extra lemon juice as needed.

Place in a bowl and drizzle with a little oil. Serve with crackers and cucumber sticks.
